One cooking technique I used this 6 Weeks is baking. The definition of baking is to cook in the oven with dry heat. I used this method when making sugar cookies.
Another method I used was Browning which is turning the surface of a food brown by placing it under a broiler or quickly cooking it in hot fat. This technique was used when I made Taco Soup.
Over the past 5 weeks one thing I have learned about Nutrition Labels. The original purpose of food labels came about when nutrient deficiences were common. In 1993, changes had to made to nutrition labels to reflect the health concern over dietary excesses. They were confusing to consumers because they: listed nutrients and portion sizes in metric weights and used complicated fine print. Today the FDA (The Food and Drug Administration) creates the Rules and Regulations for nutrition labels. Anyone can suggest changes in rules, but the final decision is based on the legislation. Current requirements include universal nutiritional information, serving sizes are standard or represent usual serving, ingredients must be listed in order by the most weight to the least amount of weight, and the address or phone number of manufacturer/distributor. However, there are some exceptions to these rules. Some exceptions include plain coffee and tea, spices, flavorings, and foods with no significant source of any nutrient, foods that are packaged in "sample" sizes not reflecting a "usual" serving, ready-to-eat foods that are prepared on site, and fruits, veggies, and fish. Nutritional Facts that must be included are Total Fat, Saturated Fat, Cholesterol, Sodium, Total Carbohydrate, Dietary Fiber, Sugar, Protein, Vitamin A, Vitamin C, Calcium, and Iron. In the past, labels listed false claims to improve health or prevent certain diseases. Now, the FDA has extremely strict regulations on which nutrients may be linked to diseases based on scientific evidence.
